I started off with fresh lettuce from my garden. (squee!)
Add chopped carrots.
Next I added some red leaf lettuce and cucumbers.
Grape tomatoes and sliced Kalamata Olives. I don't know about you but I think pretty much anything tastes better with Kalamata olives!
Lastly, I sliced a hard boiled eggs. What a gorgeous egg! They were a gift from my good friend, Jean and her hardy chickens at Two Feathers Farm. Lastly, top it off with a dollop of 1,000 Island Dressing and that's all. A light, simple salad that's great to take to work. It's filling, full of veggies-both crunch and sweet. You can't go wrong!
